Malted barley.
Still: S.O.F.A.C 1500l.
Manufacturing: Mash is made from locally sourced malted barley then distilled in an Armagnac continuous still. The whisky is then aged in ex-Macvin, Vin Jaune and Vin de Paille barrels for 5 years.
The whisky is then aged in ex-Jura wine barrels left to rest in a tuyé (traditional Jura oven in which local meats are smoked by burning fir, spruce and juniper).
Tasting Notes
Yellow.
On the nose, notes of wood smoke emerge, followed by notes of yellow fruits, smoked meat and spices.
On the palate, the smoky notes of wood and tuyé are very present, highlighting those of smoked meat. The spicy notes are also more intense, releasing a medicinal freshness and ending with notes of dried fruits (bitter almonds).
